The first section, titled, “The Connection Between Nutrition and Health”, shows the varying and complicated relationships between nutrition, physical and mental health, and disease. The second section, on the connection between health science and food, presents a number of case studies on the possible uses of effectivity of functional foods. Both sections as a whole seek to discuss methods for nutritional interventions in relation to diseases like obesity and other prominant health concerns in today’s modern society.

A word about units. Most physics and chemistry textbooks now use the MKS International System of units (SI). In practice, however, a variety of units continues to be in use. For example, in the SI system, pressure is expressed in units of pascal (kg/m2). Both in common use and in the scientific literature one often finds pressure also expressed in units of dynes/cm2, Torr (mm Hg), psi, and atm. In this book I have used mostly SI units. However, other units have also been used when common usage so dictated. In those cases conversion factors have been provided either within the text or in a compilation at the end of Appendix A.

Historians such as Bernard Lightman, James Secord, and Aileen Fyfe have shown us how the development of Victorian science was shaped by the interaction between working scientists and the general public. Darwinians such as T. H. Huxley openly competed with the advocates of natural theology for the attention of the reading public. Lectures, entertainments, and exhibitions played a role in shaping the careers of many scientists and would-be scientists. Yet we know surprisingly little about the situation after 1900, apart from the influence of a few bestselling scientist-authors such as Arthur Eddington and Julian Huxley, and the efforts of left-wing scientists to raise public awareness of how science was being exploited. We do know something about the development of popular science writing in early twentieth-century America and in some continental European countries. But for Britain we have only a few case studies by Peter Broks, Anna-K. Mayer, and Sophie Forgan. A broader study will allow us to address important issues about how the relationship between scientists and the public has changed between the Victorian era and the present. The early twentieth century was a period in which there were major developments within both the publishing industry and the scientific community.

To enrich Biology learning we must consider how to teach the subject as well as what we teach. 

The study of living organisms is called Biology. All living things have certain characteristics in common with each other. They are in dynamic equilibrium with their surroundings, constantly taking in some substances and giving out others;. While inside the organism many of these substances undergo changes. This process is called metabolism and it enables the organism to maintain a constant internal environment, regardless of external changes. Maintaining such an internal equilibrium is called homeostasis. Seven specific characteristics can be identified, which are shown by all living organisms at some stage during their life. These are growth, respiration, response to stimuli, movement, nutrition, excretion, and reproduction. Some of these characteristics can be shown by non-living things, but only living organisms carry out all seven of them. In addition living organisms are controlled by a programme of instructions contained in their genes, which can be passed on from one generation to the next. The smallest biological structure which is capable of showing all these characteristics of life is the cell. It can therefore be thought of as the basic unit of life.
